Fruit Salad with Agave Nectar Recipe

I love using Agave Nectar on fruit. It is similar to honey, yet is mostly flavorless. It is a natural sweetener that enhances the flavor of the fruit.  Here is a fantastic recipe for fruit salad using agave nectar. You can substitute for any kind of fruit you prefer. I love adding kiwi and blueberries for a pop of color.

Fruit Salad Agave Nectar

¼ cup agave nectar
2 T lemon juice
1 cup blueberries
2 peaches
1 cup sliced strawberries
1 cup raspberries
2 kiwis
3 mini bananas

1. Bring agave nectar and 1/2 cup water to a boil in saucepan. Simmer 2 minutes. Remove from heat and stir in lemon juice. Steep 15 minutes.

2. Cut up fruit and combine fruit in large bowl. Stir in agave nectar syrup. Cover and chill 2 hours, or overnight.

You can cut the strawberries in the shape of a heart for special occasions like Valentine’s Day. 😉
