Gourmet du Village Dipping Party

On Saturday night my roommate and I hosted a party for our closest friends to say goodbye to our apartment. Our lease is expiring and it is time to move on. We love doing themed parties but wanted something more relaxed. Just good drinks, good food, and good company. I received these fantastic dips from Gourmet du Village to try, and I had a really hard time deciding which ones to make. They all sound amazing: Crab, Hot Parmesan & Artichoke, Roasted Chipotle & Garlic, Hot Carmelised Onion, and more! I finally decided on Cheddar & Bacon Baked Dip, and Spinach & Artichoke Baked Dip.
Pouch of Cheddar & Bacon dip mix
1 cup mayonnaise
8.8 oz container sour cream
3 T finely grated Cheddar cheese
4 oz cream cheese, cut into small cubes & softened
Put aside 2 T of the cheddar cheese. Preheat oven to 350°F/180°C. Combine all ingredients (except for the 2 T of cheddar cheese you have set aside) in a bowl. Transfer to a Gourmet du Village dip baker (or other oven proof dish). Bake for approximately 20 minutes or until bubbly around the edges. Remove from the oven and sprinkle top with the 2 T cheddar cheese. Place under hot broiler for about 1 minute or until top becomes golden brown. Watch carefully so as not to let it burn. BE CAREFUL, dip and dish will be very hot when removed from oven.
SPINACH & ARTICHOKE BAKED DIP

1/2 cup sour cream
1/2 cup grated gruyere cheese
1 can artichokes (strained and chopped)
1/2 cup cream cheese
1 cup mayonnaise
1 cup baby spinach (chopped)
Preheat oven to 350°F/170°C. In a large bowl or mixer, combine cream cheese, sour cream, mayonnaise, and dip mix. Mix in grated cheese (reserve some to sprinkle on top before baking), spinach and drained artichokes. Transfer to a Gourmet du Village dip baker (or other oven proof dish) and bake (without lid) until hot (approx. 15-20 minutes).
These are so easy to make and are delicious. They were both a hit, but I think the crowd favorite was the Spinach & Artichoke dip. We served them with chips, crackers, pretzels and veggies.
