I love egg salad filling. Usually it is eaten on bread as a sandwich, but I put it on lettuce or even eat it as is with a spoon. That’s the best! Here’s a simple recipe I love that is just over 100 calories per serving!
Egg Salad Filling
Ingredients
6 hard boiled eggs, chopped [egg whites only]
1 C finely chopped celery
3 T. light mayo
Dash of pepper
1 tsp. dill
Directions
1. To Hard Boiled Eggs: Cover eggs with 1 inch cold water in a large pot. Bring to boil. Remove from heat, cover, and let sit 12-15 minutes. Move to cold water for 15 minutes.
2. Remove eggshell. Cut egg open and remove yolks. Chop egg whites and put in bowl.
3. Combine with rest of ingredients.
Makes 2 servings
Nutritional facts per serving: 113.5 calories, 5.3 g fat, 15 g carbohydrates, 12.5 g protein

I will have to try this! I have to be on a low fat diet b/c of gall bladder removal and I love egg salad!
