Three Bean Salad Recipe

I love the taste of olive oil and cook with it almost daily. Here is a delicious three-bean salad for you to try. This salad is one of my favorites in summer and is perfect for that family reunion or church potluck.

Three Bean Salad
Ingredients
- 1 small red onion
- 1 8- ounce package fresh frozen green beans thawed
- 1 15- ounce can garbanzo beans drained
- 1 15- ounce can kidney beans drained
- 2 tablespoons finely chopped fresh mint
- 2 teaspoons finely grated lemon zest
- 1/4 cup sherry vinegar
- 1/4 cup of Gaea's Kalamata D.O.P. Greek Extra Virgin Olive Oil
- 1 tablespoon sugar
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
Instructions
- Peel and quarter the red onion and slice it very thinly.
- Place the onion slices in a large bowl, and add all other ingredients.
- Stir and taste to see if you'd like more lemon zest or mint.
- Serve immediately or refrigerate until ready to serve.
