3 Bean Salad

I love the taste of olive oil and cook with it almost daily. Here is a delicious three-bean salad for you to try. This salad is one of my favorites in summer and is perfect for that family reunion or church potluck.

Three Bean Salad

Ingredients
  

  • 1 small red onion
  • 1 8- ounce package fresh frozen green beans thawed
  • 1 15- ounce can garbanzo beans drained
  • 1 15- ounce can kidney beans drained
  • 2 tablespoons finely chopped fresh mint
  • 2 teaspoons finely grated lemon zest
  • 1/4 cup sherry vinegar
  • 1/4 cup of Gaea's Kalamata D.O.P. Greek Extra Virgin Olive Oil
  • 1 tablespoon sugar
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper

Instructions
 

  • Peel and quarter the red onion and slice it very thinly.
  • Place the onion slices in a large bowl, and add all other ingredients.
  • Stir and taste to see if you'd like more lemon zest or mint.
  • Serve immediately or refrigerate until ready to serve.
