Preheat oven to 400 degrees.
Prepare sweet potato: Peel sweet potato and dice into bite size pieces. Mix sweet potato in mixing bowl with 2 T olive oil and season with salt and pepper. Spread evenly on a baking sheet. [I don't line the baking sheet with foil, but you can.]
Prepare chicken breasts: Place chicken breasts in a glass baking dish. Sprinkle with olive oil and chipotle seasoning.
Put both the prepared chicken breasts and sweet potatoes in the oven and cook at 400 degrees for 20 minutes.
Cook the quinoa according to the the package instructions. The quinoa, chicken, and sweet potato should finish cooking around the same time.
Heat the Bush's black beans in a saucepan on low-medium. Stir occasionally. Drain when ready to serve.
While everything is cooking, prepare your veggies. Dice the sweet onion. Remove the seeds from the roma tomatoes and dice the tomatoes. Slice the avocado. Finely chop the cilantro.
Dice the cooked chicken.
Add a little bit of each ingredient to your bowl, sprinkle with lime juice, and enjoy!
