Southwestern Quinoa Bowl Recipe

Ingredients

  • 1 cup quinoa
  • 1 can Bush’s Beans Black Beans
  • 2 chicken breasts
  • 1 large Sweet Potato
  • 1 Sweet Onion
  • 2 Roma Tomatoes
  • 2 Avocados
  • 1 bunch Cilantro
  • lime juice
  • Chipotle Seasoning
  • Olive Oil
  • Salt & Pepper

Instructions

  • Preheat oven to 400 degrees.
  • Prepare sweet potato: Peel sweet potato and dice into bite size pieces. Mix sweet potato in mixing bowl with 2 T olive oil and season with salt and pepper. Spread evenly on a baking sheet. [I don't line the baking sheet with foil, but you can.]
  • Prepare chicken breasts: Place chicken breasts in a glass baking dish. Sprinkle with olive oil and chipotle seasoning.
  • Put both the prepared chicken breasts and sweet potatoes in the oven and cook at 400 degrees for 20 minutes.
  • Cook the quinoa according to the the package instructions. The quinoa, chicken, and sweet potato should finish cooking around the same time.
  • Heat the Bush's black beans in a saucepan on low-medium. Stir occasionally. Drain when ready to serve.
  • While everything is cooking, prepare your veggies. Dice the sweet onion. Remove the seeds from the roma tomatoes and dice the tomatoes. Slice the avocado. Finely chop the cilantro.
  • Dice the cooked chicken.
  • Add a little bit of each ingredient to your bowl, sprinkle with lime juice, and enjoy!
