Three Bean Salad
Ingredients

small red onion

package fresh frozen green beans
thawed

can garbanzo beans
drained

can kidney beans
drained

finely chopped fresh mint

teaspoons
finely grated lemon zest

sherry vinegar

of Gaea's Kalamata D.O.P. Greek Extra Virgin Olive Oil

sugar

teaspoon
kosher salt

teaspoon
freshly ground pepper
Instructions
Peel and quarter the red onion and slice it very thinly.
Place the onion slices in a large bowl, and add all other ingredients.
Stir and taste to see if you'd like more lemon zest or mint.
Serve immediately or refrigerate until ready to serve.
